Chip and Dip Day - Skinny Spinach Artichoke Dip

As if you needed a reason - it's chip and dip day!  Here's Tara's recipe for you:
  • 10 ounces frozen chopped spinach (1 package), thawed. (Get the excess water out by letting it drain in a colander in the sink while you get the rest of the ingredients or you can pat it dry)
  • 1/2 cup light mayo or you can use 1/2 cup of light cream cheese for a thicker yet less skinny version
  • 3/4 cup Greek yogurt
  • 1/2 cup grated Parmesan cheese
  • 1 small can (8 ounces) artichokes, diced
  • 1 clove garlic, crushed
  • 1 1/2 cup shredded low moisture/low fat mozzarella cheese
  • Pinch fresh pepper to taste
After you have got the spinach draining, preheat the oven to 350.
Stir together mayo, yogurt, garlic, Parmesan, and mozzarella cheese. 
Fold in artichokes and spinach. (If you don't know how to fold ingredients in, make a little hole in the middle put what you wanted folded into the mixture in that hole then take some of the edges and "fold" over). Stir. 
Spray baking dish with a non-stick spray. (This step is not strictly necessary but your future self will thank you for making it easier to eat and to clean the dish later). 
Put the mixture into the baking dish and sprinkle with extra Parmesan (the extra cheese is optional. Steph's bf Juan Awesome is not such a cheese fan so he may not care for the extra cheese... but I still add it because I love cheese!). 
Bake for 30 minutes, or until the cheese is melted and bubbly and the edges are slightly golden. Remove from oven and let sit for a couple of minutes or you will burn your mouth devouring this delicious but hot dip. Enjoy!
